Quarry Bakehouse – Upper Ferntree Gully

In the heart of Upper Ferntree Gully, just opposite a lush forest, you’ll find a bakery café that’s as warm and welcoming as its ovens. Quarry Bakehouse, led by pastry chef Julian and co-owner Sarah, has quickly become a beloved local gem since opening in July 2021, right in the middle of the pandemic. This unique spot is a croissanterie, patisserie, and sourdough haven all rolled into one, founded on decades of skill, passion, and a dream that started long before the doors officially opened. 

 

From five-star kitchens to local favourite 

Julian’s journey into baking began with a lucky break, a French pastry chef in Townsville offered him an apprenticeship 36 years ago, sparking a lifelong love of patisserie. After working in five-star hotels and opening his own successful business, Chocolate Sensation in Belgrave), Julian spent time teaching baking before launching Quarry Bakehouse with Sarah in 2021. “I’d been keeping an eye on the site for years,” Julian says. “It was close to home, and the timing just felt right.” The result? A French-inspired bakery with first-class sourdough, buttery croissants, chunky beef pies, and mouth-watering toasties and burgers, all crafted with the finest ingredients and traditional techniques. 

 

What makes quarry bakehouse special 

As the first croissanterie in the area, Quarry Bakehouse is proud to bring artisan sourdough and French-style pastries to the local community. Their sourdough is second to none, made with love, care, and years of experience. And they’re not just baking for you, they’re teaching too, offering sourdough bread-making lessons and sharing their culture. With a strong focus on supporting the region, Julian and Sarah also employ local staff, including three apprentices learning the trade from one of the best in the business. “We’re all about quality and community, great food made with great ingredients, served by great people.” 

 

A bakery with heart (and dog-walk-through service!) 

Walk by Quarry Bakehouse early in the morning and you’ll likely find a friendly face at the teal-painted café window, handing out coffees and pastries to locals, dog-walkers, and mums with prams. Open from 6am, the bakery has become a community hub for good conversation, better coffee, and très délicieux pastries.

Proudly local, deeply connected 

Living in nearby Ferny Creek, Julian feels a deep connection to the Hills community, many of whom have supported him since his first bakery days. “I’ve known some of our customers for years. There’s a warmth here, a friendliness that makes every day feel rewarding.” That sense of place and belonging is baked into every loaf and latte. 

 

What’s next for Quarry Bakehouse? 

The team at Quarry Bakehouse continues to grow their local footprint, both in talent and in flavour. With plans to offer more workshops and share their knowledge with the community, Julian and Sarah are committed to nurturing the next generation of bakers while delighting loyal locals with new treats. “We want people to know there’s real technique and passion behind every product. We’re here to stay, and we’re here to make every visit feel special.”
